Arnaud Lambert, one of the Loire's top growers and an organic farmer, makes Midi from his largest holding, 3. 5 hectares of south east facing vines planted in 1985 on sandy clay over soft tuffeau limestone. Only about 10% sees oak and there's no malolactic fermentation, which keeps the acidity bright and the
